Is "low-fat cheese" a contradiction in terms?
"Dairy products taste great. When you remove the fat, you take
some of the flavor with it," said Les Lamb, director of research and
education for the Wisconsin Milk Marketing Board.
Fat, nearly half of it saturated, accounts for 65 percent to 80
percent of the calories in cheese. A 2-ounce serving of Cheddar
(about the amount in an average grilled cheese sandwich) contains 230
calories - 74 percent of them from fat - 60 milligrams of cholesterol
and 350 milligrams of sodium.
Not surprisingly, cheese does not top the list of nutrition
