The "Jack" in Monterey Jack cheese was David Jacks, who went to California's gold territory in the 1800s. His fortune, however, wasn't made in panning the streams but in producing cheese in the store he eventually owned in Monterey. He gave his name to a creamy, white table cheese that became ubiquitous in the area.

Now Monterey Jack tops every taco, every California-style salad and every California hamburger. It is no more a regional northern California cheese than Cheddar is an English cheese or Muenster is German.

But dry Monterey Jack, an off-spring of the original Jack cheese, is developing a fine reputation as a northern California cheese.
