Biscuits are as essential to a proper Southern meal as mashed
potatoes to a typical Midwestern meal. Southern cook and author Lee
Bailey once explained it: "I suppose you could have a meal without
biscuits, but it wouldn't be as good." Although I was raised on
potatoes, I've developed a true appreciation for biscuits, especially
when I cook for one or two. Unlike bread and many other baked
products, biscuit ingredients can be pared to as small a scale as I
need.
And, because biscuits don't take much longer than potatoes to
prepare and are so flavorful (especially slathered with butter), I
can make them anytime.
