Adzuki beans are small, oval, reddish-brown beans with a thin, white ridge (or keel). They have a soft texture and a nutty, somewhat sweet flavor.

Anasazi beans are small, kidney-shaped beans with white markings on a red-brown background. The color fades to a uniformly dark pink after cooking. The cultivation of these beans can be traced to the Anasazi Indians, who lived in the Southwest almost 1,000 years ago.

Appaloosa beans, from New Mexico, are kidney-shaped beans about 1/2-inch long, with black speckles on a white background. They have an earthy flavor and a mealy texture. The color contrast fades after cooking, but the markings remain distinct.
