Shrimp with feta cheese is a prized Greek dish that doesn't often
show up on restaurant menus in this country, where lamb, beef,
chicken and fish predominate.
Many people get their first taste of this classic while visiting
Greece. Diane Kochilas, author of The Food and Wine of Greece (St.
Martin's Press, $22.95), says this recipe is a specialty of Salonika,
which is on the Gulf of Salonika (the best seafood dishes in Greece
are found in coastal towns).
In Athens, tourists are served "gourmet" versions of the dish,
using ouzo and brandy. But basically, it's a simple and wonderful
regional specialty in which sauteed garlic, tomatoes and shrimp are
