Smoked Salmon and
Herb Salad With
Pickled Cucumber Vinaigrette
(4 servings)
From the Salads chapter.
For the vinaigrette:
1/2 bay leaf
1/2 cup rice wine vinegar
1/3 cup sugar
1/2 jalapeno chili pepper, seeded and minced
1/2 cup finely diced cucumber, peeled and seeded
2 tablespoons minced red onion
3/4 teaspoon crushed pink peppercorns*
1/4 to 1/3 cup extra-virgin olive oil
Salt and freshly ground black pepper to taste
For the salad:
1/4 cup fresh flat-leaf parsley leaves
1/4 cup fresh chervil leaves
2 tablespoons fresh tarragon leaves
2 tablespoons fresh cilantro leaves
2 tablespoons fresh dill leaves
3 tablespoons fresh basil leaves
Salt and freshly ground black pepper to taste
