If more consumers understood this fact of fruit life, sales of fall and winter pears would surely rise.

A ripe pear should yield easily to the bite and fairly drip with sweet, slightly spicy juice. The distinctive pear flavor should come through.

Jane Morimoto, who works a lot with pears as test kitchen director of the Evans Food Group in Seattle, stresses the importance of planning when pears are on the menu.

"When you purchase a pear, it's mature but not fully ripened. It's a marketing problem. They can't be picked fully ripe, but if you let them ripen at home they'll be juicy and really nice," Morimoto said.
