Despite its simple looks, there's nothing plain about pound cake.
It's made with the richest ingredients - butter, eggs and, in the
examples that follow, sour cream - blended into a fine-crumb cake.
It's not low in calories or fat, but it's so satisfying that a small
slice will do.
There are two keys to excellent results. First, beat the butter
(never margarine) and sugar until light. The mixture shouldn't feel
grainy when rubbed between two fingers. Second, use cake flour, not
all-purpose flour.
