It's that time of year: double-digit below-zero wind-chill
factors, Sunday mornings that begin at 10 a.m. and maple syrup.
When little else can make people feel good about winter, maple
syrup works like a magic potion, bringing a sweet, sunny accent to
pancakes, biscuits, cookies and even carrots, chicken or ribs.
"I like it because it's a sweetener," said Bill Bauer, owner of
the Summit Lodge in Killington, in central Vermont, the state that
produces the most maple syrup.
"I cook quite a few things with maple syrup. I serve apple,
banana, blueberry and chocolate-chip pancakes as well as Grand
Marnier French toast, and use maple syrup for all of it," said Bauer,
