`I'd rather be a vegetarian after this," said Rachna Gupta.
"This" was a series of experiments that the Carbondale High
School senior performed to see if it was possible for home cooks to
kill salmonella bacteria on raw chicken.
Gupta discovered that soaking the chicken for 15 minutes in a
vinegar solution killed virtually all the salmonella. The effective
dose is 4 teaspoons white vinegar per cup of water. After soaking,
cooks can rinse the chicken in cool water to cut down any vinegar
aftertaste.
In March, her research won first place - and netted her a
scholarship - in the annual Illinois Junior Science and Humanities
Symposium at Southern Illinois University in Carbondale.
