Jim Clark and Ken Beck would like to make one thing perfectly
clear about their new Granny's Beverly Hillbillies Cookbook: There
are probably a few more recipes that call for possums, groundhogs and
squirrels than you would find in other cookbooks, but it's still
good, down-home cooking that average folks would make for themselves,
Clark says.
And the ingredients aren't set in cee-ment.
If you can't find a possum, you can substitute ground beef in
any of the recipes.
The reality is that Granny's Beverly Hillbillies Cookbook
(Rutledge Hill, $12.95) is a perfectly legitimate collection of
recipes. It's written from the perspective of a good cook - like
Granny, and it's also for eaters ...
