Although every tiny region of Greece has a local cheese, it is
feta, the regional cheese of central Greece, that has eclipsed these
other varieties in the United States. At any moderately well-stocked
supermarket, you can find feta cheese near the blues and chunk
Parmesans, or packaged with its watery whey in the deli section.
But statistics show that most home cooks have never tried it.
One Kraft General Foods survey found that only 2 percent of
households interviewed kept feta cheese on hand; 13 percent bought it
when needed. By comparison, 70 percent of the households interviewed
kept grated Parmesan on their shelves.
