The U.S. Agriculture Department proposes to exempt ground beef from its new labeling regulations, which go into effect Wednesday for meat and poultry.

Under the proposal, published May 24 by the USDA's Food Safety and Inspection Service, packagers could continue to put percent-lean labels on ground beef (for example, "85 percent lean") even though it doesn't meet the definition of a low-fat food.

The new labeling law states that only foods with less than 3 grams of fat per serving can carry percent-lean labels. A food labeled "lean" can contain no more than 10 grams of fat and 4.5 grams of saturated fat in a serving. ...
