Scotch eggs won't get a green light from the fat police. In these days of zero-fat tolerance, a recipe that starts with eggs wrapped in sausage and then deep-fries them is about as welcome as a midnight double espresso.

It's one of those delicious old-fashioned, economical dishes dating back to a time when cooks didn't know cholesterol from carbohydrates. And, as such, it occasionally still has a place in the kitchen.

Here are two versions: one baked and one fried.
