Here are some recipes and rubs to enhance steaks grilled at home.
Rubs are applied to the meat's surface just before grilling.
They don't have to be applied in advance but can be coated several
hours ahead and kept in the refrigerator until grilling time.
Flavors will become more pronounced the longer the rub is on
the meat.
LEMON-ROSEMARY RUB
1 1/2 teaspoons grated lemon rind
1 teaspoon dried rosemary leaves, crushed
1/4 teaspoon each: salt, dried thyme leaves and coarsely ground
black pepper
2 large garlic cloves, minced
Combine all ingredients. Rub onto steak.
Makes enough to season 2 pounds of beef.
