"When I hired Chef [Walter] Scheib, I asked him to make the food
at the White House as good as that served in the best American
restaurants. His recipes take their inspiration from regional
American cuisine and take advantage of the unprecedented variety of
produce and products available year-round . . . .
"All the recipes have been served at White House events and
adapted for the home kitchen. Because White House guests are served
American style, with their entree, side dishes and sauces already
arranged artfully on a plate, a recipe may have several components.
Consider each one separately, and don't be afraid to try only one
part of a dish if another part of the recipes isn't appealing ...
