Nothing can match the festiveness of popping the cork from a
bottle of bubbly to toast the New Year. Not only is it tradition,
but it also raises our spirits and launches an escape to the romance
and glamor that is Champagne.
True Champagne is made of legally specified grapes grown in
certain sections of northern France's Champagne province. These
strictly regulated wines are made by a special process called methode
champenoise and are the only French wines that can be labeled
Champagne. The wine gets its effervescence from a slow second
fermentation in stoppered bottles, which produces fine bubbles and a
froth called mousse.
