You might say that Mary Miller has salmon swimming in her blood.
Her mother, Selma Leman, was born and raised on the Kenai
Peninsula in Alaska, where salmon is king. Leman's "Aunti" Fedora,
who lives in Anchorage, taught her how to make salmon loaf, and Leman
in turn passed the recipe on to her daughter.
Fresh lemon juice, lemon rind and hot pepper sauce provide tangy
flavor that nicely complements the salmon.
Grated zucchini lends moisture to Sheldon Peller's salmon loaf
recipe. A self-taught cook, Peller developed the recipe from scratch
using some of his favorite ingredients.
