Though the calendar says it's late February, the end of winter
can produce some warm days. So, for this transitional time of year,
I often serve dishes that are lighter in flavor.
Not long ago, I created a new salad - a pear, white Cheddar and
greens combination in a honey-rosemary dressing - that's perfect for
appetites hungry for warmer weather.
It takes only minutes to make and bursts with fresh, clean
flavors.
The dressing, a blend of honey, white wine vinegar, rosemary
and canola oil, is mixed with torn greens.
Then the salad is topped with thinly sliced pears, julienned
strips of extra-sharp Cheddar cheese and chopped pecans, all drizzled
lightly with the dressing.
