Crab Cake Sandwich
(Makes 2 to 4 sandwiches)
This crab cake is worth the expense of jumbo lump crab meat.
Melrose chef Brian McBride serves the crab on round sesame rolls.
Like any proper crab cake, there is a scarcity of filler so the
sandwich tends to fall apart rather easily. You may wish to use a
hoagie roll or a portion of a baguette; cut the roll in half
lengthwise and remove some of the bread to make room for the crab
meat.
1 pound jumbo lump crab meat
1 egg yolk
1 tablespoon Dijon-style mustard
2 dashes hot red pepper sauce, such as Tabasco, or to taste
1 tablespoon chopped fresh parsley
1 teaspoon Worcestershire sauce
Salt and freshly ground black pepper to taste
