If salad weather has called up the urge to hunt your own mushrooms, remember to be very careful. Many mushrooms that grow in the wild are poisonous and can be deadly; even experienced mushroom gatherers can sometimes be fooled. The best advice is buy cultivated mushrooms from your favorite market.

Once you bring mushrooms home from the market, storing them can be tricky. If you leave them uncovered, they will dry out. If you enclose them in moisture-proof wrapping, they will get soggy and disgusting. Try putting them in a closed paper bag or a shallow glass dish that you can cover with a kitchen towel or a slightly moist paper towel. If they are prepackaged, leave them that way.
