What's with goat cheese?
It seems to be everywhere.
You see it on the menus of fine restaurants these days.
Often the goat cheese is baked.
Sometimes it's in chunks.
And yesterday, "Goat cheese crumbles" appeared in my home
refrigerator!
Somewhere in this vast nation there must be lots of female goats
whose milk is made into cheese.
The sole goat that some Chicagoans have met belongs to Sam
Sianis of Billy Goat taverns. This goat has something to do with the
Chicago Cubs winning or losing games, depending on whether it's
allowed into Wrigley Field or not.
But why the current popularity of goat cheese, an ancient and
international staff of life?
