As a purely American invention, the recipe for German chocolate
cake sent to us by reader Lori Hughes has nothing to do with the
European continent. A bit of its popularity can be traced to the
Lone Star State - Texas. Requested by Mrs. A. Gyorke, this tender
and moist layer cake with pecan-coconut frosting seemed to gain
nationwide attention after appearing in a recipe exchange column of a
Dallas newspaper in 1957.
According to The American Century Cookbook (Clarkson Potter,
$35), the story began in 1852 when Samuel German, an employee of
Walter Baker & Co., (known today as Baker's Chocolate) formulated a
smooth bittersweet chocolate blend, which the company named after
