Although tiny, the seeds of a poppy plant pack a powerful punch.
As far back as 1400 B.C., poppy pods have been harvested for
medicinal purposes as well as for eating. Particularly popular in
central Europe, the Middle East and India, poppy seeds add a rich,
nutty flavor and crunchy texture to baked goods.
A few interesting recipes were sent in response to Elaine Greer's
request for poppy-seed cake made with mashed potatoes. Our first
recipe, from Darlene Sosolik of Willow Springs, should be just what
Greer was looking for: a bundt cake filled with poppy seeds, walnuts
and a cup of mashed potatoes for moistness.
