When picking pantry products, many people choose canned milk and
nonfat dry milk because they are so convenient to have on hand,
especially in January. Even winter-ready cooks are able to avoid last-
minute grocery trips in the snow to pick up fresh milk if a few cans
of evaporated milk are standing ready.
Most cooks know it as the basis for savory sauces for macaroni and
cheese or scalloped potatoes. Canned evaporated milk has a slightly
caramelized, cooked flavor, so most people enjoy it more in those
applications that disguise its cooked taste.
