February is the month in which black history is especially
celebrated, and one of the finest ways to observe the culture of
immigrant blacks is to cook and savor some of the wonderful foods of
the African-American culinary heritage.
Africans brought to these shores as slaves also carried with them
foods and methods of preparation that continue to enrich the lexicon
of American cookery. In fact, some of these foods are as synonymous
with the South as they are with the people who brought them.
Among them are sesame seeds, which are a staple in the Charleston
area, and okra, a much-maligned vegetable that is exquisite in
knowing hands.
