Beans have a long, rich history as a dietary staple for many
cultures. One of the oldest cultivated crops, beans are frequently
mentioned in the Bible and have been found in ancient Egyptian tombs.
And while beans don't always have a glamorous image, their
versatility definitely earns them a place in today's kitchens.
Dried beans, in particular, are a mainstay of a truly organic
diet. Not only are they a uniquely rich vegetable source of
protein_as well as iron, calcium, potassium, phosphorus and some B
