Wine and cheese are not like Ozzie and Harriet. The drink and food
are not perfect partners.
``People think, cheese and wine, what could be more natural? But
it's not an easy question to answer,'' says Nancy Fletcher of the
California Milk Advisory Board. ``Cheese is a complex food with very
distinctive- often pronounced-flavors and textures. And fine cheese
changes over time as it ages, just like fine wine does.''
This makes pairing cheese and wine challenging. But when paired
correctly, the wine and cheese make a wonderful couple.
There are some guidelines on which most experts agree: White wine
is easier to pair with cheese than red. Softer, fruitier wines tend
to go better with cheese ...
