Ice cream concoctions say summer

As summer draws to a close and you look for ways to hold on to the last taste of the season, here are some easy ice cream treats.

These and others are from a cookbook by Racines restaurant in Denver, Retro Desserts by Wayne Harley Brachman, (Morrow, $27), Cool Kitchen by Lauren Chatt-man (Morrow, $9.95) and the Western Dairyfarmers Promotion Association.

Double orange sundaes: 4 blood or navel oranges; 1/4 cup Grand Marnier or other orange-flavored liqueur; 2 tablespoons sugar; 1 pint vanilla ice cream. Remove the tough outer membrane from each orange section. Combine the oranges, liqueur and sugar in a bowl. Let mixture stand for 1 hour. Spoon over ice cream.
