PART of my defence against the flooded roads and power cuts of a
Devon winter is a small stock-pile of tinned food in the pantry.
And since I've no wish to poison the family I keep half an eye on
its use-by dates. Coconut milk, for instance, should be used quite
soon after canning - its shelf life is only 18 months. Once opened,
coconut milk can be kept in a covered bowl in the fridge for a day
or so - but don't leave it in the tin which can oxydise.
As an essential ingredient in the cooking of Indonesia,
Thailand, Sri Lanka and parts of India, the smooth, creamy liquid
is used in lieu of the stock or water of European cooking. It works
