Article: On the shelf: Coconut milk

PART of my defence against the flooded roads and power cuts of a Devon winter is a small stock-pile of tinned food in the pantry. And since I've no wish to poison the family I keep half an eye on its use-by dates. Coconut milk, for instance, should be used quite soon after canning - its shelf life is only 18 months. Once opened, coconut milk can be kept in a covered bowl in the fridge for a day or so - but don't leave it in the tin which can oxydise.
