BRAISED BEEF BRISKET WITH PICKLED WALNUTS
The meat from this stew is melting and tender; all that is needed
is a spoon to break it up. It's also a pleasure to be able to include
pickled walnuts in this particularly British dish.
2 x 500g pieces fresh beef brisket
Maldon sea salt & freshly ground black pepper
3 tbsp plain flour
2 tbsp beef dripping or lard
350g small onions, peeled & quartered
150g leeks, trimmed, thickly sliced on the diagonal & washed
150g celery, peeled & thickly sliced
150g small turnips, peeled and quartered
1 tbsp mushroom ketchup
1 tbsp anchovy essence
6 pickled walnuts, quartered lengthways; 3 tbsp of their liquor
550ml water or stock
2 bay leaves
