THREE months ago Paul Merrett was slaving over a hot stove and dreaming that one day he might win a Michelin star for his restaurant, Interlude.

Today the chef is awarded that prized star - but the restaurant stands empty and he is looking for fresh employment.

Merrett, 30, and his entire kitchen staff were laid off overnight when Interlude's owner decided to sell the restaurant, in Charlotte Street, in October.
