THREE months ago Paul Merrett was slaving over a hot stove and
dreaming that one day he might win a Michelin star for his
restaurant, Interlude.
Today the chef is awarded that prized star - but the restaurant
stands empty and he is looking for fresh employment.
Merrett, 30, and his entire kitchen staff were laid off overnight
when Interlude's owner decided to sell the restaurant, in Charlotte
Street, in October. Today he says: "I still cannot bear to go down
Charlotte Street.
It's too depressing. I gave that place a year of my life. I
barely saw my baby daughter Eleanor for a year because I was working
towards getting this star.
"Obviously I am very happy and pleased and proud to get it. But ...
