IS an omelette your idea of the perfect quick meal when you 've
come home from work hungry and lazy and there 's very little in the
fridge?It 's hard to beat a nice,plump,rolled omelette,but quite
difficult to achieve the desirable just-set texture that is soft and
gooey inside.This omelette has slightly too much filling to make
rolling an easy option.I prefer to cook it frit-tata or Spanish
omelette-style, leaving it flat in the pan and finishing the cooking
under a very hot grill.
Tarragon is a lovely herb to cook with eggs,but it rarely suits
the slaphappy way that you might lavish a dish with parsley or ...
