Northern cooks have been eager to embrace sweet potatoes in their
cuisine, routinely including the tubers in the greatest of American
banquets--Thanksgiving. But growing them can seem daunting. Most
varieties require 120 frost-free days and sultry temperatures to
thrive, fostering a common view that sweet potatoes, like okra,
belong only in the Southern garden.
A challenge to grow north of the Mason-Dixon line, they are quite
at home here in usually muggy Washington. They are well worth the
space they require too, for the flavor of newly lifted sweet
potatoes, steamed or roasted in their jackets, is unsurpassed,
