Something astonishing happens to pizza crust when it is cooked on
a grill.
For starters, it bubbles up and rises, releasing a scent of baking
bread. And it acquires that same flavor and texture you find in other
grilled foods. You know, the one that screams, "I taste better
because I've been wrought by fire."
But as easy as it is to make in the house, pizza is as
