Individual Shrimp Scampi Potpies

A quick and buttery panko "crust" qualified this dish for inclusion in Elinor Klivans's new book of seasonal potpies. Lemon juice replaces most of the scampis' usual olive oil or butter; the heavenly, garlicky smell emanating from your oven will help you forget what's missing. If you're skeptical about the amount of shrimp per serving, don't be. I'm a shrimpaholic, and it was enough. Serve with a salad of spicy winter greens and some toasted pita bread triangles, which can be baked at the same time.
