Individual Shrimp Scampi Potpies

A quick and buttery panko "crust" qualified this dish for
inclusion in Elinor Klivans's new book of seasonal potpies. Lemon
juice replaces most of the scampis' usual olive oil or butter; the
heavenly, garlicky smell emanating from your oven will help you
forget what's missing. If you're skeptical about the amount of
shrimp per serving, don't be. I'm a shrimpaholic, and it was enough.
Serve with a salad of spicy winter greens and some toasted pita
bread triangles, which can be baked at the same time.
If you use wider, shallower gratin dishes, you might need to
shorten the baking time and add more bread crumbs and melted butter.
