COMFORT-FOOD SUPPER
BUTTER BEAN AND GARLIC BAKED POTATO (SERVES 1) . 1 jacket potato,
baked . 1 clove of garlic, minced . 1 small tin of butter beans .
Parsley, roughly chopped PREHEAT oven to 190C/375F. Prick potatoes
with fork. Rub oil on the skin and bake in the oven for about 11/2
hours, or until the skin is crispy.
Slash one side with a cross, and gently scoop out the middle of
the baked potato.
Mix the flesh of the potato with the butter beans, garlic and
parsley.
Stuff the potato with the mixture and serve.
