Imagine a sandwich without bread, hamburger without bun, pasta
salad without pasta or pizza without crust. Such are the choices of
many on gluten-restricted diets.
Such diets are the treatment of choice for people with celiac
disease, nontropical sprue or gluten-induced enteropathy, a
malabsorption syndrome caused by sensitivity to gliadin. Gliadin is a
protein fraction of gluten found in wheat, rye, barley, oats and
their derivatives.
Eating the offending food causes diarrhea, weight loss,
irritability and other symptoms. The disease is caused by a genetic
disorder, with symptoms sometimes beginning early or appearing later.
