OK, boys and girls: It's time to take a cheese course. Not a course as in "Cheese 101," but a course as in "segment of a meal."

The cheese course is relatively new to this country, but Europeans long have indulged in it, favoring a plate of protein rather than a sweet dessert as the end to a meal.

But cheese can serve as an excellent appetizer or even a meal in itself when paired with a side of crisp salad, wine and a crusty bread. And it doesn't have to be an elaborate affair. It can be as simple as a few cheeses laid out on a board in the center of the table for all to enjoy or a more formal course in which guests get their own plates of cheeses to savor as they sit at the table.
