True balsamic vinegar is the ultimate niche product. The process that produces it is unique to a small geographic area of Italy. The vinegar is sky-high expensive because the producers don't watch the clock, they watch the calendar. It takes at least 12 years to produce in a process that is labor intensive and requires great skill and patience. You could call balsamic vinegar the ultimate slow food.
