Thailand: Vegetable-crab rice paper rolls

Could you eat 1 pound of rice a day, every day?

Rice is the staple of many Asian cuisines, consumed in (by our standards) rather large quantities. It also is used in interesting and inventive ways. One of my favorite uses is Vietnamese or Thai rice paper.

Rice papers look like small round plastic place mats with a cross- hatch design. They are made by taking cooked rice dough and rolling it very flat like a tortilla, then laying it out to dry on bamboo mats, hence the design.
