What's a St. Patrick's Day dip without a little corned beef?

We're not Irish, but that's never stopped us from loving a good St. Patrick's Day celebration with all of the trimmings. Maybe we just need an excuse to get friends together, but we find whenever there's a theme to wrap around a gathering, it's somehow easier to pull the whole thing off.

That's one of the reasons that we were delighted to open a letter from Patricia McAllister of Columbus, Ohio, and find the perfect St. Patrick's Day Dip inside.

Just take a little corned beef from the deli, and mix in some sour cream and cream ...
