The grandfather of Neapolitan pizza, focaccia is similar in that it is a form of flatbread, but it has simpler toppings and is more versatile.

A generous slice of focaccia turns a salad or bowl of soup into lunch or a light supper. Bread-sized pieces make fine breakfast toast or sandwiches. Cut into one- or two-bite squares, focaccia is exceptional with antipasti. Warm from the oven, it's an irresistible appetizer.

Like pizza, focaccia begins with leavened dough and accommodates an amazing range of toppings. A drizzle of very good olive oil and a little coarse salt may be the best topping of all. ...
