Touch of olive oil, sauce or salsa all you need atop grilled pork

One of the great ways to prepare pork is on the grill. The sweetness of the pork enhanced by a little smoke from the coals has to be one of the great flavor combinations of all time.

Instead of immersing the meat in complex marinades, I think the best approach is to cook the pork simply, brushing it with olive oil and seasoning it with salt and freshly ground pepper, and then accompanying it with an interesting sauce or condiment. I've included some of my favorites below, all of which can be made ahead of time.
