For brilliant color, heady perfume and intense flavor, berries are first pick for summer desserts.

When making desserts, put them on top (for tarts), on the bottom (for cobblers and crisps), or in between (for pies, puddings and trifles). Or put them into a pretty bowl and add sugar and cream. Even a half-pint of the juicy jewels dresses up sliced peaches or nectarines, ice cream, baked custard or yogurt.

In baked and cooked desserts, berries taste best when there's just enough sugar to sweeten the fruit without cloaking the natural flavor. Fully ripe berries need less sugar than many recipes call for while very tart ...
