Cheese is starting to receive the kind of attention generally reserved for wine. Our local wine shop now offers cheese-tasting classes, during which you can learn about fancy cheeses with names that are difficult to pronounce and even harder to spell. And the flavors can be just as complex as those of wine. Can anyone detect "hints of grass"?

Even supermarkets are getting into the act. The cheese case is crowded with offerings from around the world, and the more impressive the pedigree, the steeper the price tag.
