The cuisine of Vietnam is understated, refined and downright
delicious.
Vietnam has been occupied by many countries over the years --
China for almost 1,000 years, Portugal and France -- so you have a
nation that embraces everything from ginger to baguettes.
But the Vietnamese also have developed their own products into a
very personal cuisine like no other in Asia.
When I think of the food of Vietnam, the first word that comes to
