New Year's Eve -- that magic make-or-break evening that for some is the celebration topper of a great year and, for others, a chance to start over after a bad one. But for both, the hopes are high and usually come with big expectations.

Fortunately (I guess), I've never been caught up in the hype of New Year's because, being in the restaurant business for two-thirds of my life, I never really got to go out on the 31st.

For most restaurant people, the New Year's celebration starts between 1 and 3 ...
