Dressing chicken salad for 21st century

Time was when the words "chicken salad" were associated with the
white gloves and pearls of a ladies' luncheon. There might be a
tomato aspic on the table as well as some cucumber and watercress
sandwiches to enjoy during the rubber of bridge. Place cards, lace
tablecloths -- you get the picture.
Nowadays, of course, you can order chicken salad at a fast food
drive-through, your favorite family-friendly-chain restaurant or a
trendy bistro.
Chicken salad appears on menus sporting accents from Mexico,
India, the Middle East, Japan, China, Italy, France, Greece -- you
name it. It's upscale, it's downscale, ...
