Today's cheeses designed with gourmet menus in mind

Cheesemakers are the new rock stars of the food world and their designer cheeses command the same respect as wine.

Sophisticated, flavorful cheeses have become so trendy, some restaurants are building cheese caves to properly store them and show them off to diners.

During a panel discussion at the American Cheese Society conference in Milwaukee last week, four regional chefs said diners are keenly interested in who makes the best cheeses and are curious about how the cheeses are created and aged.
